Editor’s note: This list is not meant to be inclusive, though efforts were made to list all the locally made commercial foods in the area that includes Haywood, Jackson, Macon and Swain counties along with the Cherokee reservation. Chef Ricardo’s Authentic Appalachian Sauce
Chef Ricardo Fernandez’s three tomato sauces – the Mediterranean, with olives, capers and roasted garlic; the spicy Mucho Macho, made with 16 varieties of slow-roasted red peppers; and the Tomato and Basil, can now be found in 17 Earthfare locations across the Southeast as well as a small number of Whole Foods retailers and the Greenlife grocery store in Asheville. You can also buy online. The sauces are low sodium, gluten-free, sugar-free and vegan friendly.

Cold Mountain Toffee
This toffee company describes its product as surprisingly soft, delicious and addicting. Different toffee flavors include milk chocolate, butterscotch, dark chocolate, peanut butter, white chocolate, crème de menthe and café mocha. They will ship orders, which usually take three days or only one day for NC residents. One-pound bags cost $12.50 and half-pound bags are $7.

The Dillsboro Chocolate Company specializes in exotic flavors with more than 100 creations. Lu’s Specialties Foods LLC
Owner Janet Green, former owner of Sake Sushi, offers all that’s needed to make restaurant quality sushi right in your home. She sells carefully blended, shelf safe sushi rice seasoning, sesame oil and ponzo sauce. Other products include panko, sushi rice, sesame seeds, wasabi powder, nori sheets, bamboo mats and more. Her products are sold from her store and at Kim’s Oriental Market. She plans to sell her sauces in several other locations such as The Water’n Hole, Salty Dog’s and Maria’s Mexican Pueblo. Janet also does in-home cooking demonstrations with her sauces. Specialty products range anywhere from $2.29 to $5.50. In-home cooking demonstrations vary in price and depend on the menu.

Spring Ridge Creamery
Get farm fresh whole milk, butter milk, chocolate milk, eggs, cheeses and hand dipped ice cream at the Spring Ridge Creamery. The dairy sells 500 gallons of homemade ice cream a month on average. The location of the farm right on U.S. 441 is convenient for tourists coming into the mountains from Atlanta.

Steeple Chase English Toffee
This local favorite serves up delicious homemade toffee straight from the kitchen. Customers can come into the shop or order by phone, fax or from the Web site. The store is open year round, but only ships products from October to April. Flavors offered are tropical (without chocolate), original, plain (without nuts) and butter mint crunch. In-store you can buy a half-pound bag for $6.94, a one-pound bag for $12.97 or a one-pound bag of “tid-bits for $6. The candy is sold in the store and at Burr Studio in Waynesville.

Stoltzfus Bread Basket
This Amish style bakery makes fresh breads, muffins, bagels, cakes and desserts. It features fresh daily soups such as cheesy bacon potato or chicken corn noodle. Some of the new bread flavors are chopped onion bread, cracked wheat, marble bread and white bread with sunflower seeds. The bakery also offer bulk foods, deli meats, cheese and candy.

Valley River Vineyards
This vineyard in the heart of the mountains sells a variety of wines such as North Carolina Vidal Blanc, Mattie Hatchett Red, Country Boy Blush and North Carolina Red Muscadine. It offers free vineyard and winery tours by appointment. It even sells pick-your-own-grapes for those who make wine at home. They host free wine samplings Fridays and Saturdays from 1 p.m. to 6 p.m.

Yellow Branch Farmstead Cheese
Yellow Branch takes its name from the small creek that flows down the mountain and feeds into Fontana Lake, close to the farm. It creates the cheese from the milk of a small herd of Jersey cows. Different varieties include Yellow Branch Pepper Cheese, Yellow Branch Basil Cheese and Yellow Branch Natural Rind Cheese. These cheeses are sold in several stores and restaurants including the Cork and Bean Wine House in Bryson City and the Snowbird Mountain Lodge and The Mountainview Bistro at Fontana Village in Robbinsville.

Local Food Glossary
With all the different terms related to local foods and agriculture, sometimes it can be confusing to distinguish the difference in meaning. Here are a few useful terms related to the local foods you are buying.
• Community Supported Agriculture (CSA): Individuals can pledge to support a farm operation by subscribing to a farm and purchasing a share of the farms goods for a year. Through this program, each week shareholders receive a box of fresh in-season produce and goods straight from the farm.
• Certified Organic: The United States Department of Agriculture requires that anyone who produces, processes or handles organic agricultural products must be certified by a USDA-accredited certifier in order to sell, label or represent their products as “organic.” To become certified, an organic producer, processor or handler must develop, implement and maintain an organic system plan and meet certain standards for growing, storage, processing and shipping.
• Organic (Not Certified): Farmers that make every attempt to grow goods without using chemicals or pesticides. They often meet the USDA requirements to be certified but have not gone through the certification process.
• All-Natural: This term is inconsistent in meaning as there is no true definition or requirements for something to be considered all-natural. If farmers or food artisans use the term, they are likely saying the product is without hormones, artificial sweeteners, food colorings or flavorings.
• Locavore: One who is dedicated to eating food grown locally whenever possible.
